There are many fruits and vegetables that are being harvested at this time of year.  Also, it is a time when we want comfort foods.

 

Here are a few recipes I enjoy.

Rhubarb Custard Pie

 

note: Rhubarb grows wild in Alaska, FYI  :)

 

This pie is different than what we usually get when we

think of Rhubarb Pie.  This one is delicious.

 

3 cups finely cut rhubarb

1 1/2 cup sugar

pinch salt

3 Tablespoons cornstarch or flour

3 Tablespoons butter

4 Tablespoons evaporated milk

2 egg yolks

 

Cook about 5 minutes, stirring often.

 

Pour into baked pie shell.

 

Top with Mirange:

 

2 egg whites

4 Tablespoons sugar

Vanilla

At this time of year Pumpkins and Sweet Potatoes are in abundance.

Here are some great recipes for them.

 

Sweet Potato Pie

 

1 9-inch pastry shell

1 1/2 cups mashed sweet potatoes

2 Tablespoons melted butter

1 cup sugar or 1/2 cup brown, and 1/2 cup white

1/2 teaspoon nutmeg or cinnamon

1/2 teaspoon salt

2 eggs (beaten)

1 tall can evaporated milk

 

Combine ingredients.  Pour into pastry shell and bake at 425 degrees F. for 10 minutes.  Reduce heat to 350 degrees and continue to bake 40 minutes or until knife inserted in center comes out clean.

Sweet Potato Casserole

 

3 cups cooked mashed sweet potatoes

1 cup sugar

2 eggs

1 tsp. vanilla

1/4 cup milk

1/2 cup butter

Mix all ingredients together and pour into buttered casserole pan.

 

Topping

1 cup packed brown sugar

1/3 cup flour

1 cup chopped pecans

1/3 cup butter

Mix topping ingredients together and sprinkle over potato mixture.

 

Bake at 350 for 30 minutes.

Tip:

When you find a recipe you especially love, copy it to an index card and have the card laminated for easy cleaning and durability.

 

Why not put together several cards and give as a gift.
