Vicki Ferguson | | Hey folks.
I'm new to the board and this network. My name is Vicki and I'm a married mom of 2 girls. I'm hoping to find new recipes as I am really getting bored in the kitchen! lol
I wanted to share this recipe for my Mom's clam chowder. It's very simple and very tasty and even fancy enough for company.

Mom's Clam Chowder
3-4 medium potatoes (peeled and 1/4" cubes) 4 medium carrots (peeled and sliced) Enough water to cover in a large soup pot. Bring to a boil and cook until veggies are semi-firm.
In seperate pan: 1 medium onion (diced) 1/2 package bacon (diced) Fry until the bacon is cooked but not crispy.
Drain the fat from the bacon mixture and add into the veggie mixture.
Then add: 2 cans cream of potato soup 4 cans BABY clams with liquid Give a good stir to break up the canned soup.
Add 4 cups whole milk. Heat through stirring often. Be careful it doesn't scorch on the bottom of the pot.
Just before serving, add a couple splashes of lemon juice and chopped fresh parsley.
Even my kids love this soup!
I recently used the same recipe to make a wonderful corn chowder - all the same except I used fresh corn instead of the clams. The kids loved that one too.
