Growing up in South Chicago and spending lots of time in Grandma's Basement... I can still smell the Homemade Kraut in the Wooden Casks. The Cabbage we Harvested from the Victory Garden... We also raised a Pig or Two in "Chicago"... yes in those days you could be YOU.... as long as you Shared with the Neighbors. This is so good I am on my way to the Store for the Potatoes...The only thing we don't have here already
SZEKELY GOULASH (say-kaly goulash) (Szkely Gulys) Ingredients for 4-5 servings. You will Want More! 2# Lean leg of Pork or pork shoulder 2 tablespoons all purpose flour 2 teaspoons paprika 1 ½ teaspoons salt 2 tablespoons fat (best part) 3 tablespoons finely chopped onion 2 jars Steadmans Sauerkraut (has to be glass jars, it is best, Or if you are Lucky, HOMEMADE) 1 ½ cups thick, fresh sour cream. (yum-yum) Need 4-qt sauce pot or Dutch oven having tight fitting cover. Cut pork into1 ½ inch cubes Coat meat evenly (shake in bag) with flour, salt & Paprika mix) Set aside Cook fat & onion in sauce pot until onion soft Add contents in bag to pot brown meat on all sides, turning occasionally Add 3 tablespoons hot water Cover pot and simmer for 1 hr, stirring and add water as needed Drain (rinse with cold for milder kraut ) sauerkraut Add to meat with 2 cups Hot Water Bring to boil, cover and simmer ½ hr until meat tender to fork Remove from heat and fold in Sour Cream, blend well w. wooden spoon Cook over low heat 3-5 minutes. Do not boil Be sure to have plenty of real Paprika to season ae serving We also cook pot of Fresh Red potatoes, or white, covered w/parsely Even though it just Shirley & me now we cook Triple this, because it is better tomorrow after a day in Fridge
