I'm using a Dell Axim X50V which I can whole-heartedly recommend as good unit for a VoIP PDA.
It has built-in Wifi, Bluetooth , 64 MB , and an excellent VGA screen for easy viewing. It's also upgradeable to the new Windows Mobile 5.0 operating system which offers a lot more in the way of connectivity. That was an important consideration for me and I believe prospective buyers should follow suit as well.
I got it on sale last month from Dell Canada's site (I'm Canadian). It was regular $499 and I got it for $385 with free shipping.
Dell will probably have more sales as Christmas approaches. They're famous for that so if you can hold off for awhile, you should.
I've been using it for a month and have Skype installed. It works excellently on my home WiFi setup. Haven't field tested it yet though.

With the new WiMax and NEC WiFi technologies that will soon be available (1-2 years) which allows for cellphone type connectivity, I can see this combination eventually being on par with cellphone service.
