Welcome to the chocophile network. I am not a sculptor in chocolate, but I certainly admire them. For the past two years I have had the opportunity to attend major pastry competitions where chocolate showpieces are one of the centerpieces of the contest. Here is a link to the chocolate showpieces created for the 2004 World Pastry Team Championship held in Las Vegas in July, 2004 as well as for past championships from 1999 - on.

Perhaps you can gain some inspiration from these. To learn the specific techniques involved will probably require apprenticing yourself to a chocolatier who is involved in these kinds of competitions or going to a culinary school where this kind of work is done.

Thank you very much for a link to the chocolate showpieces! There are so many beautiful chocolate sculptours that impossible to belive that this is real chocolate...
Where is the best school to learn this art?

The sculptures r just amazing!!! mindblowing....its unbelievable that this is real choclate!!!!

There is a chocolate/confectionery molding school located in Chicago. I have not attended yet, but it looks like what you may be looking for.
