Welcome to the chocophile network. I am not a sculptor in chocolate, but I certainly admire them. For the past two years I have had the opportunity to attend major pastry competitions where chocolate showpieces are one of the centerpieces of the contest. Here is a link to the chocolate showpieces created for the 2004 World Pastry Team Championship held in Las Vegas in July, 2004 as well as for past championships from 1999 - on.

Perhaps you can gain some inspiration from these. To learn the specific techniques involved will probably require apprenticing yourself to a chocolatier who is involved in these kinds of competitions or going to a culinary school where this kind of work is done.

The sculptures r just amazing!!! mindblowing....its unbelievable that this is real choclate!!!! Adore all of these artists.....they done it up with their hearts of choclate!!!
