After a hectic day out, decided to make some pasta / macroni in the evening. Thankyou Sumanji for teaching me this. It really tasted yummy!!

Hi I am Kedar, just moved back from Singapore and live in Khar. This potluck thing seems to be a great idea. Here I confess that I love to cook. For starters, I would love to start this movement and the first venue can be my home. If anyone is interested do let me know and we will fix a date convenient to all.

Since I am absolutely new here on this network, I have no idea whether I will get either NO RESPONSES or there will be a DELUGE.

Can I keep it to say 5 kick ass cooks and their spouses (i have one too) and look forward to a great evening of food and drinks?

I know I am writing this message to people who are yet unknown to me but then all my good friends were unknown to me before I met them!!!

I have no idean of what I could be getting into but if we meet people we have been ordained to meet..then why not.

Ok here's how it goes........... ( Lalit hasnt used any vegies in his pasta. It's plain )

Pasta ( Fusilli or even shell one will do ) - 100gms

Tomato - 150 gms ( abt 3 large or 4 )

Vegetables ( beans, carrot, cauliflower ) OR ( spring onions, carrot, mushroom ) OR Non-Veg ( boneless chicken, mushroom ) - 200 gms ( total )- cut into thin strips

Olive oil - 2 tbsp

Cheese Spread - 1 tub ( 200 gms )

Milk - 150 ml

Low Cal Cream - 150 ml

Salt - to taste ( put less as cheese is there )

Dry Thyme - 1 tbsp

Pepper pwd

Chilli flakes

Grated Cheese

Heat Olive Oil in a non stick kadahi / saucepan. Crush the thyme and put. Add ur veg / non veg combo and fry till abt jst done - dont over cook or soften 2 much. Add salt, pepper pwd and chilli flakes ( to taste ) - adjust accordingly. Saute for a mt.

Chop & puree the tomatoes and add to the pan. Cook 4 sumtim, till the rawness goes. Add cream & cheese spread and give a boil. Add the boiled Pasta and mix well. Simmer 4 a short time only. Lastly add the milk and simmer. Remove onto a serving dish and sprinkle some grated cheese on top and some chilli flakes. Serve warm.

Makes a one-dish meal. To complement it, u can serve some soup and toast and mayb add on some cutlets or even veg / chicken lollipops. MAMA MIA ! ! N'JOI ! !

Hey Vibhs, you can add Thyme or if u cant find it, try using the spices u get along with Pizzas, they works quite well...if u cant get that either, jus bring along all u have over to my kitchen,cos i got loads of Thyme..;)

Yes Vibha,

U can use anyother herb like Oregano - as it is readily available or Rosemary - this also gives a very unusual and nice flavour. If you r not having anything, jst skip it ! And mayb add a generous helping of freshly crushed pepper.

Yes, the amt of cheese is quite substantial. But u get a large serving of the ready dish - abt i kg. It's abt 2 containers of oval shaped alluminium packing box.

Good show Tejashree..... Yes ! it's heavy with all that cheese & cream ( use low cal cream ) . But it's YUM ! That's why u dont need anything along with it. Mayb jst soup and toast.

Incase, u hav 2 reheat the leftovers later add a little milk 2 it and micro for 2 to 3 mts, depending on the left over quantity.

Ah yes, there are leftovers...but this time i guess we shall just have the pasta...the garlic bread was gr8with it...but it gets too heavy!

Hey Guys,

I made delicious Pasta with tomato redchilli sauce and mushrooms..
It was Absolutely a treat for the eyes and the stomach..
Used a lot of tomatoes, couple of red-chillies and a packet of mushrooms
Herbs- Thyme,basil and some sage
Plus salt ofcourse..
Also sprinkled some grated cheese


It looked a bit like this....

Recipe for moi pasta??? Well, i kinda cook with no preset recipe in mind, but shall try to recall how i made it
and give you the recipe... Here goes,

Things you need :-
Pasta ( Fusilli is what i have used,but you can use one of your choice ) - 250gms

Tomatoes - 6 Large

Vegetables -i've used only Mushrooms,here again you can add any veggie you like(Carrots,capsicum,cabbage,etc)

Olive oil - 2 tbsp

Salt -to taste

Dry Thyme & Basil - 1 tbsp

Red chillies- 3(can add more if you like it more spicy,but this was pretty HOT)

Grated Cheese -1/2cup

Procedure:-
In a pan, pour about 1/2lt of water and leave the pasta to boil(this should take about 20-30mins)

Heat Olive Oil in a pan,add the tomatoes & Red-chillies, cook them to a point where they turn into pulp and are well cooked,add the mushrooms and cook for another 4mins.

Add salt,basil and thyme and stir it all in together and cook for a minute or 2 .Add the boiled pasta,sprinkle the grated cheese and mix it all well.

Serve on a plate and eat with Plain or Garlic bread
