I have tried to make curd but it is always very watery and I end up running to the market for Nestle or other brands for set curd.
If any one has a suggestion on this pelase do let me know.

Simple :
Boil One litre
Allow it to cool down for around 20 minutes.Add One Teaspoon of good Quality Curd and close the vessel.You should be able to get good quality Curd after 6/7 hours.

Take a bowl full of milk, just heat it a bit. It should not b hot 2 touch ( otherwise u get a watery curd ), but jst a wee bit warm, add a tsp of curd. Mix it well or best is 2 pour in2 another bowl and do this 2-3 times ( the way v cool tea by pouring 4m a distance ). Then cover with a lid, it should not b air tight or just put a plate on top of the container. Best is 2 keep it overnight in ur kitchen cupboard or leave it inside ur oven / micro. Malini Suryanarayanan | | I know some use milk powder to make thick dahi. They dissolve 2Tbsp in a little water to make a thick paste. Mix it with the milk, heat it to simmer, cool down to slightly higher than body temperature and set it with a teasespoon of curd from previous batch.
In cold places like Bangalore it is advisable to leave the curd to set near your stove or even in an oven with its pilot light on for overnight.
The thickness of the curd depends on the fat content in the milk you buy and also on the weather. If the milk is really fatty then curd becomes slimy and if the temperature outside is very hot (when the curd is setting) then it becomes runny!

Himani, Only b careful, not 2 keep the alum 4 too long or the milk will curdle .......... jst a tch & swirl and take it out. Mayb, the pre curdling stage - the milk must b getting a bit thick and thus thick curd ......
I never had 2 resort 2 any methods - unglazed pot / green chilli / alum / milk powder ...... And get good set curd, which is not sour 2.ONLY the milk temp has 2 b correct. Not VERY HOT. Private Reply to Suman Tripathy |

I make curds in the very same style as Rhea..Warm milk a 2/3 teaspoon of curds..stir gently..set aside..U c nice thick curds.... consistency just like a pudding without any water (it sips out) ..
Brings back the memories..when i was a little girl in the olden days ...ladies carrying earthern pots on their heads wud come to sell curds... shouting...'Dahiiiii lo dahiiiii'

Add a spoon of Dahi in a glazed ceramic pot (No need to keep changing the pot:-) and pour the milk into it, microwave it for 1 min and leave it in the microwave to set. Its ready in out 4 Hrs.....

Been There and Done That .........MY WAY | | In all the methods mentioned above, one important factor is missing;
- The touch of the master cook of the house i.e. now in my case it is mother but before that when granny was alive, she was the one who always set the curd in the house.
No matter what you do, there will always be a subtle difference of taste when the preparation is by the lady of the house with all her love and affection tranfering thru that touch in whatever dish she makes for U.
I guess in tru filmi style it can be called as;
"Maa ka pyaar"
