Hi joined this NW today. The food of Konkan is basically very simple.rice, and coconut are the main ingradients as both these are found a plenty in konkan.the variations are made from rice and coconut.Poha that is puffed rice,is also frequently used.People from Konkan worship shree ganesha whose favourite is MODAK which am sure you`ve heard also tasted--its a delicacy. It requires a lot of art to prepare MODAK .They begin any new activity with shree ganesha`s blessings. So this is prepared on ganesh chaturthi, sankashti etc.the other delicacies are puran-poli-made from gram dal and white flour,Shreekhand- made from curds and sugar,Basundi-condensed milk with sugar,gulachi-poli,pakatlya- purya, sakhar-bhaat karanji,Anarse ...the list is endless. There are a variety of salty foods made from rice basically like masale bhaatetc.
Everyday food is simple comprising of Varan-bhaat(boiled dal and rice),Aamti(Tempered dal),Bhaji,Poli,Koshimbir(raw salad) and dahi bhaat. It is a full square meal which includes all the constituents. With the fast life this meal is fast vanishing still one meal of the day does comprise of all these things.Konkani food varies with each district so does the language so there are variations in this basic pattern in terms of mode of preparation.
Am a vegetarian so mentioned veg food but there are good non-veg dishes aswell.

to add to Swati's post,

Amsul or Kokam is an important fruit used in konkan - you may have heard of solkadhi - it's prepared with amsul extract.

Then again fruits like mango, jackfruit, cashew and banana are used in preparation of vegetables.
The pulp of mango, jackfruit is dried like a sheet in the hot sun - you get amba poli, phanas poli, etc..

cheers!
