I know Tog has done a lot of work with heathcare systems/companies - but am not sure he was working on management systems - I think it was more focused on external users (signing up for heathcare products etc.) but you may find he has written more about this area.

Maybe you shouldn't limit your research to the heathcare sector as I am sure a lot of the practices will be mirrored elsewhere - scheduling, bookings, customer records...
Is this a transition from a paper system or an existing computerised one? This may have an impact on your research/design.

Personally, I think your requirements analysis will be crucial - as you mentioned it is the doctors who will use the system so it needs to meet their needs. Different practices may operate in different ways - so if this is being sold to multiple 'customers' ;) - then maybe the system will need to be adaptable to their differening needs?

I am sure others will be able to offer more specific advice :)
